  • Royal Icing: Mix at medium speed, 1 lb. of mix and 1/3 cup (2.5 oz) of water, beat until icing stands in peaks. Flavor and color as desired.
  • Picture or Flow Icing: Add 2-3 teaspoons of water to each 1/2 cup of Royal Icing prepared as above.  Mix by hand. 1#-bag covers approximately 25-30 three inch cookies.

Note: During the warmer seasons, if your royal icing turns out taffy-like, keep mixing the icing and add water one tablespoon at a time mixing well in between. Do not exceed five tablespoons of extra water. If it turns out like watered down taffy, set aside for five minutes and stir again. It should regain the royal icing look and consistency.

Answer: Yes, you can do it in smaller portions. Mix proportionally.

Does this type of royal mix work well for string work?

Answer: Yes

What coloring do I use to color this icing different colors?

Answer: Gel colors work well, but other coloring will also work.
If you want red use 77-101R, green use 77-101G or black use 77-101K, in these just add water.

Can I make just a little at a time?

Answer: Yes. I often make 1/2 batch.

Answer: It should be used within 24 hours.

How long will icing on cookie last at room temperature? Any suggestions on how to store iced cookies? Room temperature? Refrigerator? Freezer?

Answer: They will last as long as your cookies. We suggest freezing them, single layer in a box. You may want to put the box in a bag, just don't let the bag settle on top of the cookies.

How much icing will one pound yield? I have a class project with "small" gingerbread houses (28)

Answer: Usually an 8 oz (dry) package of royal icing is adequate to assemble and decorate a small gingerbread house. :-)
